Bitter first became popular in the beverage world, with cocktail bitters, mouth-puckering IPAs and black coffee making customers go wild. Now bitter flavors are expanding into the solid realm, with foods like kale, brussels sprouts and bitter chocolate showing up on more and more American food menus.
