Food waste goes in the trash (or is economically disposed of) at most restaurants, but Blue Hill Restaurant in New York did something completely different with theirs.
They saved rejected produce and other food overstock and scraps that would otherwise never see a human mouth, and turned it into gourmet cuisine that they served to customers in an effort to raise awareness about food waste.
